    About this recipe: This is a fruity, low-fat turkey curry that is a nice change of pace for the family. Serve over plain rice, if desired.

    Serves: 4 

    • 450g turkey mince
    • 1 apple, cored and chopped
    • 2 small onions, chopped
    • 3 sticks celery, chopped
    • 1 red pepper, chopped
    • 1 1/2 tablespoons olive oil
    • 2 tablespoons plain flour
    • 2 tablespoons curry powder
    • 475ml skimmed milk
    • 180g brown rice
    • 60g raisins or currants
    • 550ml chicken stock

    1. Prepare the raisin rice: In a large nonstick pan, toast the uncooked brown rice over medium heat, stirring frequently, until most of the rice is toasted. Add the raisins and stock, and bring the mixture to the boil. Reduce the heat to low and cover, and cook for 25 minutes or until the liquid is absorbed.
    2. Cook the turkey mince over medium-high heat until browned evenly, stirring frequently. Drain the turkey on kitchen paper and set aside.
    3. Spray a wide nonstick frying pan with vegetable oil spray. Over medium heat, saute the apple, onion, celery and red pepper stirring frequently, until the onion is translucent, and set aside.
    4. In a large saucepan, heat the olive oil over low heat just until it is warm. Stir in the flour and curry powder. Heat and stir over medium-low! Continue to heat until the flour begins to bubble. Gradually add the skimmed milk to the curry mixture, continuing to whisk over medium-low heat until the mixture thickens. When the mixture is thick, add the turkey and the apple-onion mixture. Stir well and heat through.

    Really nice dish, minced poultry made it perfect for my fussy tot, made it mild for her then spiced up remainder for adults.  -  24 Mar 2014


    It was a little bland for me, but would definitely be good for a family. I didn't like the rice very much and wish I'd left the raisins out and cooked as per packet instructions.  -  25 Mar 2014
