Healthy and wholesome pear muffins

    Tasty muffins that are really moist and easy on the waistline too! Enjoy for breakfast or a delicous snack :)

    Ingredients
    Serves: 9 

    • 250g wholemeal flour
    • 1 teaspoon baking powder
    • 1 teaspoon ground cinnamon or mixed spice
    • 2 eggs, lightly whisked
    • 200ml milk at room temp
    • 4 teaspoons vegetable oil - any sort will do
    • 4 to 5 teaspoons clear honey
    • 150g grated pear
    • 100g mixed seeds

    Method
    Prep:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Preheat your oven to 180 C / Gas 4. Line a muffin tin.
    2. Mix the dry ingredients together well.
    3. In a separate bowl, mix the wet ingredients together, excluding the grated pears at this point.
    4. Add the wet mix to the dry mix and fold in, being careful not to over beat. At the same time, fold in the grated pears. Try to make sure that it has been distributed evenly but don't over mix!
    5. Sprinkle the mixed seeds over the top. You could add oats as well to give some extra crunch.
    6. Bake until golden on top and a cocktail stick comes out of the muffin clean, 25 to 30 minutes.
    7. Leave to cool fully or serve warm!
