Roast parsnips and apples

    Slices of sweet red apple and parsnips are tossed in butter and roasted. Delicious with roast pork or gammon. Sometimes I toss some orange rind over them before serving.

    Serves: 4 

    • 2 large parsnips, peeled and sliced diagonally
    • 2 large eating apples, sliced into thick wedges
    • 60g butter, cubed
    • Grated orange zest (optional)

    1. Preheat oven to 200 degrees C / Gas mark 6.
    2. In a baking tray or large casserole dish, arrange the parsnips and apples. Dot with cubes of butter and roast for 30 minutes or until tender.
    3. Season with salt and pepper and fresh orange sezt (if using).
