About this recipe: These waffles taste indulgent without actually being indulgent. Using egg whites and low-fat dairy produce reduces the fat content.

Serves: 5 

  • 125g (4 1/2 oz) wholemeal flour
  • 20g (3/4 oz) branflake cereal
  • 1 teaspoon baking powder
  • 225ml (8 fl oz) semi-skimmed milk
  • 115g (4 oz) half-fat crème fraîche
  • 1 teaspoon clear honey, plus more to serve
  • 2 egg whites
  • 300g (10 1/2 oz) strawberries, sliced

  1. Heat your waffle maker according to the manufacturer's instructions. In a large bowl, combine the flour, cereal and baking powder.
  2. Make a well in the centre of the dry ingredients and add the milk, crème fraîche and honey. Mix together to make a batter.
  3. Whisk the egg whites until stiff peaks form, then fold into the batter until just blended.
  4. Pour enough batter into the centre of the waffle maker to cover two-thirds of the grid. Close the lid and bake for about 4 minutes or until the lid will lift up easily. Remove the waffle with a fork and keep hot while baking the remainder.
  5. Serve the waffles hot with the sliced strawberries and honey to taste.
