About this recipe: I had to make something sweet for work (as it was my birthday) and I was close to panicking as I seemed to have melted loads of chocolate with not a lot to show for it. I threw in some more ingredients and these turned out fab - to the point they are demanded every time there is an excuse from my work colleagues :)

  • 340g (biggest bar you can find) decent eating (not cooking) chocolate i.e. Galaxy®
  • 40g butter
  • 3 dessertspoons golden syrup
  • about 200g Rice Krispies® cereal

Prep:20min  ›  Cook:10min  ›  Extra time:2hr  ›  Ready in:2hr30min 

  1. Make a bain marie with a saucepan of simmering water and a heatproof glass bowl.
  2. Break up the chocolate into small chunks, chop the butter.
  3. Add chocolate to the bowl in the saucepan and let melt, stir in the golden syrup and then the butter - the mixture will start to thicken - take it off the heat as soon as the ingredients are mixed - you have to work quite quickly, but don't panic.
  4. Stir in the Rice Krispies® until they're coated - use less or more depending on how much coating to crispy you like.
  5. Transfer to a tin or dish and spread the mixture to the sides, chill until set, then cut into squares.

Other ideas

A lovely addition to this is some big fat sultanas and mini marshmallows and chopped glace cherries.
