Spicy winter cabbage soup

About this recipe: A low fat warming soup great for the winter evenings and cheap and quick to make. Serve with lots of crusty bread.

Serves: 6 

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 1 green cabbage, shredded
  • 1 large potato, peeled and cut into small cubes
  • 1 teaspoon chilli flakes or powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon ground fenugreek (optional)
  • 1L vegetable stock
  • 200g tinned butter beans, drained and washed
  • salt and pepper to taste
  • creme fraiche (optional)

  1. Heat oil in a large saucepan and saute the onions without colouring for 5 minutes.
  2. Add shredded cabbage, diced potatoes, spices and stock, bring to the boil then simmer for 15 minutes.
  3. Add the butter beans and simmer for a further 5 minutes.
  4. Once everything is tender, puree the soup using a hand blender, season to taste with salt and pepper and stir in creme fraiche.

Used this receipe but modified using red cabbage. Replaced cumin, corriander - 18 Jan 2013


Surprisingly good. Didn't have any butter beans so used cannelini beans instead. Needs a generous amount of chilli powder to make it interesting. - 28 Aug 2013
