Remove the cores from the apples, but keep them whole. Try your best to make sure the apples have no seeds left. Put them into a roasting pan and put into the oven until soft and tender, about 1 hour.
In the mean time, prepare your slices of bread. Remove the crusts if you'd like to, and dip each piece into a bowl of beaten eggs with a dash of milk. You can add cinnamon to the egg mixture if you would like. Dip the bread so that its completely coated but not saturated with egg.
Fry the bread in a non-stick pan until the egg is no longer raw.
When the French toast is cooked, and the apples too, remove from the oven and serve whole on the plate with toast and a blob of mascarpone. Slice or mash the apple initially then put mascarpone on top, followed by honey.
If you'd like, you can easily go to the store and buy a pack of mixed berries to replace the baked apples- they work just as well, if not better. Strawberries, baked apricots or baked peaches or pears work just as well.
