About this recipe:This is an easy warm apple sponge, which you serve upside-down. This is so easy and you can even use other fruits depending on what is in season - pears, cherries, berries, peaches, etc.
1 apple, peeled, cored and thinly sliced
5 tablespoons caster sugar
125g self raising flour
6 tablespoons milk
4 tablespoons hot water
1 teaspoon vanilla extract
2 tablespoons sugar

Preheat the oven to 180 C / Gas 4. Grease a pie dish.
Heat the sliced apples in the microwave for a minute or until softened.
Add the butter and caster sugar to a food processor, and mix until light and fluffy. Add the egg, flour, milk, water and vanilla one by one, mixing between each addition. Mixture will be quite thick.
Sprinkle the pie dish with 2 tablespoons of sugar, then place the apple slices evenly over top. Spoon cake mixture over the apples.
Bake for 30 to 40 minutes in the centre of the preheated oven.
Allow to cool slightly, then place a flat plate on top of the dish, and invert so that the cake is upside down on the plate. Serve with ice cream, cream or custard.
A lovely moist apple cake! Hubby loved it and will make again. I must admit I didn't read the recipe and just creamed the fat and sugar and then mixed with the rest of the ingredients. Will be making lots as I have a zillion bramleys' in the garden . - 11 Nov 2013
