Sausage and mushroom stuffing

About this recipe: Use this simple sausage stuffing to stuff your Christmas turkey. Easy and delicious. You can add other fresh chopped herbs, such as sage or thyme, instead of parsley.


Serves: 8 

  • 675g sausagemeat
  • 450g mushooms, chopped
  • 1 onion, chopped
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons poultry seasoning
  • 300g fresh breadcrumbs
  • 5 tablespoons finely chopped fresh parsley
  • 3 eggs, beaten

  1. Brown sausagemeat in a frying pan over high heat. Add the mushrooms and onions; cook for 3 more minutes. Add seasonings and remove from heat.
  2. In a bowl, combine the sausage mixture with all remaining ingredients, adding the eggs last.
  3. Stuff a turkey with the stuffing and roast the turkey as directed in your recipe. Or, place the stuffing in a baking dish and bake at 180 C / Gas 4 until browned, approximately 45 minutes.

I decided to roll into stuffing balls, so left the sausage meat raw until shaped then dropped in the fryer for 15 seconds to colour. Very tasty, very moist - 17 Aug 2016
