Creamy turkey pasta salad

    A fabulous use for leftover turkey. This creamy salad uses leftover roast turkey, combined with pasta, walnuts, celery and apples. Serve on a bed of lettuce.

    Ingredients
    Serves: 6 

    • 100g natural yoghurt
    • 3 tablespoons mayonnaise
    • 3 tablespoons cider vinegar
    • 1 tablespoon sugar
    • 1/8 teaspoon black pepper
    • 350g cooled cooked pasta, such as penne
    • 60g chopped walnuts
    • 350g cooked turkey, cut into pieces
    • 4 sticks celery, sliced
    • 2 apples, cored and diced

    1. Put the first 5 ingredients in a glass or ceramic bowl and mix until smooth. Add all the other ingredients and fold together. Serve on some lettuce. Enjoy.

    Tip

    Omit the pasta and apples and you have a great pitta wrap filling.
