About this recipe: A delicious, true sponge cake, made with only eggs and no butter. This one is flavoured with honey, cinnamon and cloves.


Serves: 12 

  • 6 eggs, separated
  • 250g plain flour
  • 1 teaspoon bicarbonate of soda
  • 200g sugar
  • 230g honey
  • 1 pinch ground cinnamon
  • 1 pinch ground cloves

  1. Preheat the oven to 180 C / Gas 4. Grease and flour a 22x33cm tin, or line with parchment.
  2. Sift together the flour and bicarb.
  3. In a separate bowl, cream together the egg yolks and sugar until light and fluffy. Beat in the honey. Fold in the flour.
  4. Beat the egg whites until stiff peaks form (but not dry) and gently fold into the cake mixture.
  5. Tip into the prepared tin and bake for 1 hour.

Wonderfully easy to make if you're willing to apply a little elbow grease and it tastes amazing. I flavoured mine with ginger. In an air tight box, this cake will easily keep for a week or more. - 26 Dec 2012
