About this recipe: This very simple cake is made with a hot milk and butter mixture, hence the name. it is utterly divine despite its very simple ingredient list!


Serves: 16 

  • 225ml milk
  • 110g butter or margarine
  • 250g plain flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 4 eggs
  • 400g caster sugar
  • 2 teaspoons vanilla extract

  1. Preheat the oven to 190 C / Gas 5. Grease and flour two 23cm (9 in) cake tins.
  2. In a saucepan over medium heat, combine the milk and butter, and heat till the butter is melted.
  3. In a bowl, combine the flour, baking powder and salt.
  4. In another bowl, beat the eggs for 4 minutes, or until thickened. Gradually add the sugar and beat on medium speed for 5 more minutes, or until pale and fluffy. Stir in the vanilla.
  5. Combine the flour and egg mixtures. Beat on low speed until well combined. While mixing, add the milk mixture and beat until combined.
  6. Divide the cake mixture between the two prepared tins and bake for 25 minutes in the preheated oven.


You can make this in one tube cake tin or a Bundt tin; simply bake for 50 - 60 minutes instead.

Such a good recipe! Cake came out so moist! Great UK recipe as pretty much all, mainly American recipes, say to use cake flour which isn't available in the UK apparently. I used some tips from Gretchens bakery's recipe ie. Mixing the sugar and eggs over a hot boiler which made that part quicker. - 11 Apr 2016
