Carnevale cake (Schiacciata alla fiorentina)

About this recipe: This sponge, called Schiacciata alla fiorentina, hails from Florence and is made during Carnival. It is a basic cake, eaten plain or served with jam or whipped cream.


Serves: 8 

  • 250g plain flour
  • 150g caster sugar
  • 2 eggs
  • 5 tablespoons olive oil
  • 180ml milk
  • 1 orange, juiced and zested
  • 2 teaspoons baking powder
  • icing sugar for dusting

  1. Preheat the oven to 200 C / Gas 6. Grease a rectangular cake tin, about 20x30cm.
  2. Mix all of the ingredients in a large bowl, adding the baking powder last. Tip into the prepared tin and bake for 30 minutes.
  3. Cool before dusting with icing sugar.
