About this recipe:This fresh tasting pea soup is made with frozen garden peas and garnished with bacon. The bacon dripping helps to give the soup loads of flavour despite having just a handful of ingredients.
3 rashers streaky bacon
1 onion, chopped
750ml chicken stock
450g frozen garden peas
salt and freshly ground black pepper

In a large saucepan, cook the streaky bacon and onion over medium heat until the onion is soft and the bacon is cooked. Remove the rashers from the pan and set aside.
Add the stock and the peas to the pan. Bring to the boil, then reduce to a simmer.
Once the peas are cooked, about 10 minutes, remove the pan from the heat. Tip the contents into a blender or food processor and purée until smooth (do in batches if needed). Season to taste with salt and pepper. Return to the pan and reheat.
Meanwhile, chop the bacon rashers to small pieces.
Garnish each serving of soup with a sprinkling of bacon, and serve.
