Orange beef stew

    This stew was passed on by my mother-in-law. It is quick and easy to make and tastes lovely served with dumplings.

    Serves: 4 

    • 450g (1lb) stewing or braising steak
    • oil as needed
    • water to cover
    • 3 beef stock cubes
    • 4 carrots, sliced
    • 4 sticks celery, chopped
    • 2 large potatoes, cut into small pieces
    • 1 large onion, chopped
    • salt and pepper to taste
    • 3 (400g) tins Heinz® cream of tomato soup

    1. Cut the steak into 1 inch cubes, and brown in a little oil in frying pan.
    2. Once browned, transfer meat to large pan, add enough water to cover meat then add the stock cubes. Bring to the boil then simmer for about 45 minutes.
    3. Add vegetables, salt and pepper and simmer for 45 minutes.
    4. Drain off most of the liquid and add the tomato soup, stir well and heat until simmering.
    5. Stew can now be served or transfered to a casserole dish and keep warm in the oven till ready to serve.

    Other ideas

    Any veg of your choice can be added, I have often just used a frozen casserole veg pack.
