Easy rock cakes

    These lovely, crumbly rock cakes will remind you of your childhood! Like any scone-type recipe, you can make these plain or add currants or dried candied peel.

    Makes: 24 rock buns

    • 6oz butter
    • 450g plain flour, sifted
    • 1 1/2 teaspoons baking powder, sifted
    • 6oz light golden brown sugar
    • 2 eggs, beaten
    • finely grated lemon peel from 1 lemon
    • 60ml milk, or more if needed

    1. Preheat the oven to 200 degrees C / Gas mark 5. Lightly grease 2 baking tins.
    2. Use your fingers to rub the butter, sifted flour and baking powder, and light brown sugar together, until it resembles fine breadcrumbs.
    3. Stir or mix in the beaten egg, grated lemon peel and milk.
    4. Dollop the mixture onto the greased baking trays (the mixture will look quite thick - like rocks!) and bake for 20 minutes in preheated oven, or until golden brown and cooked through.


    Add 80g of currants to the flour mixture before you add the egg and milk.

    My mum used to make rock cakes when i was a kid & i forgot how to make them until today & i saw this recipe...so i made some....smell beautiful and taste wonderful just like my mum made them......Brilliant.  -  26 Aug 2014
