Heat the double cream and add the orange extract and zest of half the orange, but do not boil! The bubbles will start to rise along the side of the saucepan and this is time to remove from the heat. Leave to stand and infuse the orange.
Melt the 250g chocolate in a double boiler until smooth.
Add the cream mix by straining through a sieve into the melted chocolate, and mix well to form a ganache.
Transfer into a jug and pour into your cases or moulds, remembering not to fill to the top. Place in the fridge overnight.
Once the ganache is set, you can add whatever decoration you wish. We add another layer of melted milk and white chocolate for extra sweetness topped off with orange zest a sprinkle of shortbread crumbs and a sliver of orange zest.
Place back in the fridge to set again and put into a storage container.
When eating allow them to settle at room temperature for a few minutes then enjoy!!
this is the second time i have made this and the quantaties are definaltly wrong, you need to use at least double the cream if not more or it is far to solid to pour,
i tend to use a pipeing bag but taste lovely - 16 Dec 2012
