Apricot layer bars

    A friend in the States sent me this recipe, and I've made it a couple of times a year ever since. It's a really quick tray bake, and the apricots give the cake cars a lovely flavour. This also works with any dried, tinned or fresh fruit!

    Serves: 12 

    • 100g dried apricots
    • For the base mixture
    • 110g butter
    • 60g caster sugar or granulated sugar
    • 110g plain flour
    • For the top layer
    • 2 eggs
    • 125g caster sugar or soft brown sugar
    • 1/2 teaspoon vanilla extract
    • 1/2 teaspoon baking powder
    • 35g plain flour

    1. Rinse the dried apricots, cover with water and boil for 10 minutes. Drain and cool. Once cool, chop and set aside.
    2. Preheat oven to 180 C / Gas 4. Grease a 20cm square baking tin.
    3. Mix the ingredients for the base mixture using a fork until crumbly (butter, sugar and flour). Pat into pan.
    4. Bake until lightly browned, about 25 minutes.
    5. Meanwhile, make the top layer. Beat the eggs, mix in the sugar, then the vanilla extract and baking powder. Finally, beat in the flour before folding in the chopped apricots. Pour the apricot top layer onto the base mixture.
    6. Bake until browned, another 30 minutes. Cool and cut into bars.
