Sophie's salmon scallops

    A delicious dish with salmon and scallops cooked with white wine, creme fraiche, lemon and parsley. Serve with boiled rice and green beans.

    Ingredients
    Serves: 4 

    • 100ml olive oil
    • 1/2 onion, finely chopped
    • 2 salmon fillets, cut into 2cm cubes
    • 1 pack scallops
    • 200ml white wine
    • 150ml creme fraiche
    • 1/2 lemon, juiced
    • 1 small bunch parsley

    Method
    Prep:5min  ›  Cook:15min  ›  Ready in:20min 

    1. Heat up the oil and add the onion into a frying pan.
    2. Chop the salmon fillets into small squares (about 2cm) and add into the pan once the onion is see-through. Cook for 5 minutes.
    3. When the salmon is cooked, add in the scallops and white wine. Stir for 5 minutes.
    4. Next stir in the creme fraiche and squeeze over the lemon juice.
    5. To finish off, chop a small bunch of parsley to garnish.
