Stuffed marrow

    If the marrow is large cut it into 4 pieces. A marrow can be used for between 2-4 people. This is a very simple but delicious meal.

    Serves: 2 

    • 450g (1 lb) minced beef
    • 1 beef oxo cube
    • 1 onion, diced
    • 10 mushrooms, quartered
    • 1 red pepper, diced
    • 1 yellow pepper, diced
    • 1 tin chopped tomatoes
    • 1 teaspoon dried crushed chillies
    • 2 garlic cloves, crushed
    • 1 tablespoon dried mixed herbs
    • salt and pepper to taste
    • 1 large marrow, halved and hollowed (or quartered if large)
    • handful grated Cheddar cheese to top

    1. Preheat oven to 160 C / Gas 3.
    2. Brown the mince in a large frying pan, crumble oxo cube and fry for 5 minutes. Add onion, mushrooms and peppers and fry until brown.
    3. Add tinned tomatoes, chilli, garlic and herbs and simmer for 10 minutes add salt and pepper to taste
    4. Place the marrow on tin foil and make a foil boat shape around it, spoon in the mince mixture and top with cheese, bake in the oven for 30 minutes until marrow is soft and the cheese is golden brown.

    I haven't made this yet, but I was wondering what you do with the marrow flesh that you scoop out. Does this get added to the mince mixture?  -  14 Sep 2012


    Hi I have added chunks of the flesh to the mix before. Better than wasting.  -  28 Sep 2012
