    About this recipe: A delicious and novel recipe for chestnut stuffing with peas and bacon - perfect at Christmas or any time of year!

    Serves: 10 

    • 500g chestnuts
    • 500ml chicken stock
    • 250g bacon, cut into 2cm pieces
    • 125g onions, finely chopped
    • 100g butter, softened
    • 250g peas
    • 1 pinch dried rosemary
    • 1 pinch dried sage
    • 1 pinch dried thyme
    • 1 pinch dried parsley
    • 1 pinch dried mint
    • 3 large eggs, beaten
    • 250g breadcrumbs
    • 1 pinch salt
    • 1 pinch pepper

    1. Slit the chestnuts on both sides using a small knife. Boil chestnuts in water for 5 - 10 minutes. Boil chestnuts in water for 5 - 10 minutes.
    2. Cook chestnuts in stock for 5 minutes, then allow to cool.
    3. Preheat the oven to 180 C / Gas 4.
    4. Fry the bacon and onions with a knob of butter until onions and soft and without colour.
    5. Combine chestnuts, onion, bacon, peas (thawed) and herbs, together with 3 beaten eggs, breadcrumbs and 50g butter.
    6. Grease a deep 9x13-inch baking pan with remaining butter.
    7. Bake for 40 minutes.


    Use any combination of herbs that you like - try experimenting with other flavours - orange zest, etc.
