Mousse au chocolat

    Two ingredients results in pure heaven. This dairy free chocolate mousse needs nothing more than good quality chocolate and eggs. Always perfect!

    Ingredients
    Serves: 6 

    • 200g dark chocolate, chopped
    • 6 eggs, separated

    Method
    Prep:15min  ›  Cook:3min  ›  Extra time:4hr chilling  ›  Ready in:4hr18min 

    1. Melt the chocolate in a double boiler or in the microwave, using short 30-second intervals and stirring between each.
    2. Beat the egg yolks. Slowly add the melted chocolate, whilst beating.
    3. In a separate bowl, beat the egg whites until stiff.
    4. Gently fold the stiff egg whites into the chocolate mixture, 1/3 at a time. Spoon evenly into 6 ramekins or glasses and chill for 4 hours before serving.

    The secret...

    You might be tempted, but do not add any other ingredients. No water, no butter, no sugar.

    Just like my grandma used to make! I think prep time is a bit longer for me, I like to fold in the egg whites spoon by spoon, gently. I also add grated roasted hazelnuts for decoration and that extra sensory enjoyment  -  25 Oct 2015
