Easy cheese tart

    This comforting cheese tart is perfect served alongside a green salad. The white sauce is easy to make, and if you use a shop-bought pastry case it makes it even easier.

    Serves: 6 

    • 1 (23cm) pastry case
    • 2 tablespoons (30g) of butter
    • 2 heaped tablespoons of cornflour
    • 500ml milk
    • salt and pepper to taste
    • 2 large eggs, beaten
    • 2 large handfuls of grated Gruyère, Comté or Cheddar cheese

    1. Preheat oven to 180 C / Gas 4.
    2. Melt the butter in a saucepan, then add the cornflour. Stir until the mixture is smooth. Add the milk, stirring constantly to avoid lumps. Allow the mixture to thicken over low heat.
    3. Once thickened, add salt and pepper to taste. Off the heat, add the eggs, stirring vigorously. Then add the grated cheese.
    4. Pour the mixture into the pastry case and bake about 40 minutes, until golden skin has formed on top of the tart.
