Chop about 1 or 2 inches off your chorizo and skin it if needed. Boil a kettle and warm a pan and a frying pan up.
While the pans are heating up get a mug and loosely put some cling film over it with enough of it to hang over the sides. Add salt, pepper and oil to the cling film. Crack an egg over it and gather up the sides and tie it tight.
Put your toast in the toaster and your chorizo in the frying pan. Put your hot water into a pan and wait until it is boiling. When oil starts to come off the chorizo add the egg to the boiling water and take your toast out. When the egg is white, plate up on the toast, pour the oil from the chorizo over the toast and sprinkle chorizo over.
