Halloumi cheese cake

    A delicious, savoury cake made with halloumi cheese, fresh mint and sesame seeds. It's Greek in origin and called Tyropita. It tastes even better the next day. So easy to make too.

    Serves: 10 

    • 6 eggs
    • 225ml groundnut oil
    • 375g self raising flour
    • 2 teaspoons baking powder
    • 1 tablespoon chopped fresh mint
    • 2 tablespooons sugar
    • 225ml milk
    • 125g floured raisins
    • 250g halloumi cheese, grated
    • 2-3 spoons sesame seeds

    1. Grease a spring form cake tin (with a hole in the middle) with oil. Dust it with flour.
    2. In an electric mixer, beat the eggs until fluffy. Slowly add the oil while you mix.
    3. Mix the flour, baking powder, mint and sugar in a bowl.
    4. Add one third of the milk, followed by one third of the flour mixture. Repeat until you have mixed in all of the milk and flour mixture. Try not to over beat it . Stop the mixer and add the raisins and the grated halloumi.
    5. Pour the mixture into the cake tin and sprinkle over the sesame seeds.
    6. Bake for about 45 to 50 minutes in moderate oven until golden.

    pregnant and craving this cake!! Thank you so much for this recipe!! it was DELICIOUS!! Just like how i remember. I altered it a bit and added a handful of dried mint. And Canola oil instead of the other oil mentioned. Since i live in america, i converted 2,1/2 cups flour. 2cups halloumi i put it in the oven for 50mins at 360F which i think is approx 180C  -  28 Jan 2014
