Garlic honey and lemon roast chicken

    Crispy whole chicken with lots of garlic and honey, nice to eat with fresh French bread and a nice red wine.

    • 1 whole chicken
    • 2 lemons
    • fresh thyme
    • 1 whole garlic bulb
    • some fresh cracked black peper
    • 200ml extra virgin olive oil
    • some sea salt
    • 300ml honey

    1. Preheat oven to 180 C / Gas 4. Wash the chicken inside and outside to remove any dried blood, pat dry with some kitchen roll.
    2. Stuff chicken cavity with 1 lemon, quartered, the thyme, 1/2 the bulb of garlic and some black pepper.
    3. Place chicken on a roasting tin and drizzle with some oil, sea salt, pepper and 150ml of the honey.
    4. Place chicken in oven and roast until juices run clear when cut through the skin between leg and breast, about 1 1/2 hours.
    5. While chicken is roasting, loosen the remaining garlic and fry slow with some oil on the hob until garlic becomes soft when pressed on.
    6. Before serving, remove chicken from tray and remove lemon, thyme, and garlic from the cavity and place in the tray with all the chicken juices.
    7. Add a little water, juice from last lemon and honey; reduce by boiling.
    8. When it's all reduced, strain the sauce over the chicken and place the garlic around the chicken.
