About this recipe: An adapted recipe by the great Mary Berry, the addition of a few small ingredients makes this beautifull diverse recipe absolutely delectable.

Makes: 8 Biscuits

  • 50g butter or margarine
  • 25g caster sugar
  • 1 1/2 teaspoons lemon extract
  • 1 teaspoon vanilla extract
  • 75g self-raising flour

  1. Preheat oven to 180 C / Gas 4. Line a baking sheet with greaseproof paper.
  2. Beat together the butter, sugar and flavourings. Sift in the flour and bring together to form dough.
  3. Roll into walnut-sized balls and place on a lined baking sheet. Press down to 0.5cm thickness with a fork.
  4. Bake until just golden, about 15 minutes. Overbaking could cause biscuits to become too hard, so watch the time carefully.


The addition of chocolate chips can be made but they mustn't be too large and substituting the lemon essence for orange essence with chocolate chips makes beautiful choc-orange biscuits.
