Spice and apple cake

    A lovely moist cake with a hint of cinnamon. The best cooking apples are tart, flavourful and firm. Delicious!

    Makes: 10 medium slices

    • 200g self-raising flour
    • 200g sugar
    • 180g butter or Flora® spread
    • 3 eggs
    • 1 tablespoon cinnamon
    • 2 medium to large cooking apples

    Prep:15min  ›  Cook:35min  ›  Extra time:5min cooling  ›  Ready in:55min 

    1. Preheat the oven to 190 C / Gas 5 and grease a 20cm round (circle) baking tin.
    2. In a large mixing bowl add the flour, sugar and then butter or Flora® and give a little stir to mix the butter into smaller chunks.
    3. Then add the eggs and mix well until all the lumps are gone.
    4. Next add the cinnamon (this amount depends on how you like it).
    5. Then skin and core the apple and chop it into small chunks.
    6. Lastly add the apple chunks and mix well. Then pour into tray.
    7. Bake until brown, about 35 minutes. As soon as it comes out the oven, remove from tray. Serve hot or old.


    On step 3 if the mixture is to thick add a splash of milk. If its to runny add a little more flour.


    Can be made gluten free by just changing normal flour to gluten free self-raising flour.

    Simple and easy to prepare. Utterly delicious. I added a little more spice and some sultanas and we ate it with afternoon tea and as a pudding with ice-cream.  -  23 Oct 2012
