Prune and walnut cake with toffee icing

    A fruity cake with prunes, walnuts, and a delicious toffee icing poured over while still warm. Yummy!

    Makes: 10 medium slices

    • 200g self-raising flour
    • 200g caster sugar
    • 175g Flora® spread or butter
    • 3 eggs
    • 100g chopped prunes
    • 75g chopped walnuts
    • 100g butter
    • 100g brown sugar
    • 75g treacle or golden syrup

    Prep:15min  ›  Cook:35min  ›  Extra time:5min cooling  ›  Ready in:55min 

    1. First preheat the oven 190 C / Gas 5. Grease a round baking tray.
    2. Next in a large bowl add the flour, caster sugar, the 175g Flora® (or butter) and eggs and mix all together until smooth with no lumps.
    3. After that add the prunes and walnuts and stir them in. Then pour the mixture into greased baking tray.
    4. Bake in oven until brown, about 35 minutes.
    5. When the cake is out the oven remove from tin and let it cool for around 5 minutes.
    6. When the cake is nearly cooked or has just come out you can make the toffee sauce on top. In a small saucepan melt the 100g butter and brown sugar on a low temp.
    7. When it has melted add the treacle or golden syrup - doesn't matter which one - and stir it together until sticky and soft.
    8. Take of heat and keep stirring, as it's very hot and will keep on cooking.
    9. Lastly drizzle the toffee over the cake and eat up.
