500g plain flour
4-5 tablespoons plum jam

Preheat the oven to 160 C / Gas 3. Line a baking tray with parchment.
Combine butter and sugar in a mixer bowl on low speed. Add flour gradually and mix on low for a further 2 minutes. The dough will form a ball.
Flour a work surface and roll the dough up to 2mm thick. Cut as many large circles as you can with a large round biscuit cutter (8-10). In the centre of half of the rounds, cut a smaller round circle with a smaller round biscuit cutter.
Transfer to the prepared baking tray. Bake for 20 minutes. The edges should be lightly browned. Let the biscuits cool.
Spread the plum jam on top of each whole round biscuit, then lay the 'doughnut' shaped biscuits on top.
