Tomato and basil chicken confit

    A divinely simple chicken confit, made with chicken breasts, fresh tomatoes, onion, ham and loads of basil.

    Serves: 4 

    • 1 tablespoon olive oil
    • 2 onions, chopped
    • 4 chicken breasts
    • 500g tomatoes, chopped
    • 5 slices ham, diced
    • 15g basil leaves, chopped

    1. Heat the olive oil in a large pan over medium heat. Sweat the onions until they are golden brown (about 10 minutes).
    2. Add the chicken breasts and brown on all sides.
    3. Add tomatoes and ham. Cook for 10 minutes, or until the liquid has mostly reduced, then sprinkle with the chopped basil. No need to salt, as you've got salt from the ham. Yum!
