Sarah's 'healthy' Eton mess

    Okay, so it isn't really that healthy but it's slightly less bad for you than regular Eton mess that is made with just double cream. I tend to use defrosted frozen raspberries as they're cheaper.

    Serves: 6 

    • 150g raspberries or strawberries
    • 1 tablespoon honey
    • 1 small tub whipping cream
    • 1 pot low fat Greek yoghurt
    • 4 meringue nests (homemade or shop bought)
    • several strawberries or raspberries for decorating
    • sprinkle icing sugar

    1. In a small bowl, mash the berries to a pulp and mix in the honey.
    2. Whip the cream using an electric whisk. Once thick, mix in the yoghurt using the lowest setting on the whisk.
    3. Pour the berry mix on top of the creamy yoghurt. Break the meringue into small chunks and place on top of the berries and yoghurt mix.
    4. Mix the berries and meringue into the creamy yoghurt so it is fairly evenly distributed but not so mixed in that you swirls of the berry mix can no longer be seen.
    5. Serve in pretty glasses or bowls. Arrange a couple of berries on top as decoration and dust with icing sugar.

    Other ideas

    As you can tell, I'm not an accurate cook so I can't really be specific about the ratio of cream to yoghurt to berries.
