Spiced clementines in syrup

    I like to serve these warm with vanilla ice cream as a dessert over Christmas. I suggest serving two clementines per person so this recipes serves 4.

    Serves: 4 

    • For the syrup
    • 300ml water
    • 100g granulated sugar
    • 2 tablespoons white wine or liqueur, such as Grand Marnier
    • 1 cinnamon stick
    • 6 whole cloves
    • 1 star anise (optional)
    • 8 clementines

    1. Pour the water in to a pot and add sugar. Heat gently to dissolve. Add the liqueur, cinnamon stick, cloves and star anise (if using). Boil for 5 or 10 minutes until it becomes thick and syrupy.
    2. Set the syrup aside to cool while you peel the clementines. Remove any bits of white pith but keep them whole.
    3. Place the clementines in the warm syrup, then spoon over the syrup making sure they all get coated. Serve warm or transfer into a sterilised glass jar (with tight lid) and store in the fridge.
