Hannah's simple bottom of the cupboard not traditional pork casserole

    I had some pork casserole chunks and just emptied my cupboards and fridge to make a casserole with it. Turned out gorgeous and so easy to make in one pot! The other great thing about this recipe is you can really use what ever veg you have in the fridge. I've even done it with sprouts. Nice winter warmer :)

    Serves: 4 

    • 500g pork casserole chunks
    • 4 medium potatoes, peeled and chopped into bite size pieces
    • 1 onion, chopped
    • 2 garlic cloves, crushed
    • 1 (400g) tin tinned tomatoes
    • 2 tablespoons tomato puree
    • 180g black eyed beans (soaked overnight and pre-boiled) or tinned baked beans will also go
    • 1 carrot, peeled and sliced thinly
    • 110g frozen peas
    • 1 handful chopped broccoli
    • 4 basil leaves
    • 200ml cold water
    • 2 pork stock cubes
    • shake mixed herbs
    • big splash Daddies® brown sauce

    1. Add all the above ingredients into a large casserole dish, Ensuring that all veg and meat is cut into bite size pieces.
    2. Place in the oven at 190 C / Gas 5 for 4 hours.
    3. Enjoy with crusty bread.


    Check every hour or so as you may need to a dd little more water.
