Yummy coconut and choc chip muffins

    Delicious coconut and chocolate chip muffins. Lovely still warm for breakfast, or refreshing later in the day with a nice cup of tea.

    Makes: 12 muffins

    • 100g sugar
    • 110g soft brown sugar
    • 220g plain flour
    • 1 tablespoon baking powder
    • 1 tablespoon melted butter
    • 180ml milk
    • 2 eggs
    • 2 teaspoon coconut extract
    • 75g chocolate chips
    • 60g desiccated coconut

    1. Mix together the dry ingredients of sugar, brown sugar, flour, baking powder in a bowl.
    2. Combine the melted butter, milk, coconut extract and eggs.
    3. Mix the dry ingredients from step 1 together with the wet ingredients from step 2 (leaving the mixture slightly lumpy as this will make lighter textured muffins).
    4. Finally mix in the chocolate chips and the desiccated coconut. Fill your muffin cases so they are about 2/3 full.
    5. Put in pre-heated oven at 180 C / Gas 4 for 15 to 20 minutes, depending on your oven.


    If you don't have coconut extract, try vanilla or almond instead.

    These muffins were very easy to make and were very tasty. I could not get coconut extract so used vanilla instead.  -  24 Apr 2012
