Mum's family favourite tea time cheese and tomato pasta bake

    Delicious family recipe my mum made and then taught me, so easy to cook and very cheap ideal for families and students,s etc. Perfect winter warmer.

    Serves: 4 

    • salt to taste
    • 500g dried rigatoni pasta
    • 4 (400g) tins peeled plum tomatoes
    • 470g Dutch Edam cheese
    • 1 tablespoon basil

    Prep:5min  ›  Cook:25min  ›  Ready in:30min 

    1. Fill a large saucepan with water, add a good pinch of salt and bring to the boil.
    2. When the pan of water is boiling add the whole packet of dried pasta. With a knife and fork chop the tomatoes well into small pieces, cook in a large saucepan on a low to medium heat until simmering.
    3. Whilst the tomatoes are cooking chop all the Dutch Edam cheese into small cubes (Dutch tastes better and is cheap) and add to the tomatoes.
    4. Add a tablespoon of basil to the tomatoes and cheese. Allow to simmer 10 minutes, or until cheese is melted and soft.
    5. Drain the pasta into a large oven dish pour the tomato and cheese sauce over and mix with the pasta.
    6. Place in the oven for 5 minutes at 180 C / Gas 4. Serve with crusty or garlic bread to mop up the juices. Eat hot.


    You can use any pasta but the rigatoni soaks the juice and cheese up. Available in Asda own brand very cheaply, Dutch Edam is available in all supermarkets and really gives the best taste.

    Great, quick recipe. I added a pinch of salt and sugar to the tomato, doubled the basil and added some cracked pepper on top. Really yummy and cheap!  -  19 Jul 2013
