Dieters chicken stir fry delight

    A recipe given to me by my personal trainer full of goodness; very low in fat, tasty and filling. Ideal for dieting and simple to make. I never liked peppers before but this dish is great.

    Serves: 4 

    • drizzle extra virgin olive oil
    • 1 red pepper, chopped
    • 1 green pepper, chopped
    • 1 yellow pepper, chopped
    • 1 large onion, chopped
    • 1 pack (540g) chicken breasts, diced
    • 1 bag or tin beansprouts
    • 1 clove garlic, chopped
    • 300g wok noodles
    • 3 tablespoons light soy sauce

    1. Pour oil into a wok on a high heat add all chopped veg and stir often.
    2. Dice chicken breasts and add to the vegetables. Add beansprouts, garlic and wok noodles stir often for 10 minutes or until all ingredients are soft and chicken is cooked.
    3. Add a few splashes of light soy sauce and eat hot.


    You can use use any vegetables you like or rice if preferred.
