Yummy stuffed courgettes

    This recipe is so simple, it's gluten free, filling and healthy. These are really nice with plain cous cous or brown rice flavoured with turmeric.

    Ingredients
    Serves: 4 

    • 4 courgettes
    • 1 red onion, finely chopped
    • 1/2 teaspoon cumin seeds
    • 1 pinch paprika
    • 12 to 15 cherry tomatoes
    • 4 carrots or parsnips, grated

    Method

    1. Preheat oven to 190 C / Gas 5.
    2. Slice courgettes in half, lengthways and scoop the flesh from the middle. Grate the flesh.
    3. Put the chopped onion and cumin seeds in a tiny amount of hot water in a frying pan, add paprika and tomatoes and fry for 2-3 minutes.
    4. Add the grated carrot or parsnip, plus the courgette flesh and cook for a further 5 minutes.
    5. Load the mixture into the courgette shells and put on a foil lined baking tray and bake for 30-45 minutes, until courgette shells are soft.
