Easy aubergine dip

    This dip is delicious with corn chips, bread sticks and crudities or spread on Ryvita topped with cucumber.

    • 1 aubergine
    • 2 tablespoons lemon juice
    • 2 tablespoons olive oil
    • 2 tablespoons chopped parsley
    • 1 tablespoon tahini
    • 1 clove garlic
    • salt and freshly ground black pepper

    1. Bake the aubergine at 200 C / Gas 6 for 40 minutes, or till soft all the way through.
    2. Allow to cool, cut in half, scoop out the flesh and discard the stem and the skin. Purée the flesh along with the remaining ingredients.

    Serving suggestion

    Try mixing in chopped tomato or red onion for variation.
