Begsy's cheese dream

    'Begsy' was my Aunty Beryl. When her mother died, she brought up my uncles. This is something she used to feed them on a regular basis. As the family grew up and new families emerged, this recipe was passed on but we all have our different take on it. I'm not going to lie, it isn't going to be the most healthy meal you'll ever eat but it's one of the simplest, heart warming and filling ones. One where you can almost guarantee clean plates from everyone, including children.

    Serves: 4 

    • 1.5kg potatoes
    • 500g bacon
    • 2 white onions, chopped
    • 6 tomatoes
    • 300g grated cheese

    1. Peel potatoes and place in salted water and bring to the boil. Cook for around 20-30 minutes until soft enough to mash.
    2. While the potatoes are cooking, grill the bacon until cooked the way you like it. When cool enough to handle chop it up roughly (normally into pieces around 1.5 to 2cm) and set aside.
    3. Spray a frying pan with oil and fry onions until golden. Remove and drain any excess oil.
    4. Slice the tomatoes. You will get maybe 6 slices per tomato.
    5. When the mash is ready, stir in the bacon and onions and divide between the dinner plates (must be able to withstand heat). Flatten down with a fork until it is about an inch deep.
    6. Turn on your grill to warm up. Cover the potato with the slices of tomato and then sprinkle liberally with cheese.
    7. Place under a hot grill until cheese melted and starting to brown. Serve right away.


    One of my children didn't used to like tomatoes so we used to substitute these for baked beans.


    If you'd like a spicier dish, you can substitute the plain cheese for a Mexicana (chilli cheese).
