Boxing Day turkey curry

    A simple turkey curry recipe, perfect for Boxing Day. You could make the same recipe with leftover roast chicken, too.

    Serves: 4 

    • 600g turkey, diced
    • 2 onions, chopped
    • 2 peppers, seeded and sliced
    • 2 tablespoons curry powder
    • 1 tablespoon plain flour
    • 450ml chicken stock
    • 150ml gravy

    1. Lightly brown the turkey then remove from the pan. (Or use cooked turkey and skip this step.)
    2. Fry the onion and pepper in the oil remaining in the pan until soft. Then add the curry powder and flour. Cook gently for 2 minutes stirring well.
    3. Blend in the stock and gravy. Return the turkey to the pan and bring to the boil, stirring well.
    4. Cover and simmer for 45 minutes.
