    About this recipe: This is a simple recipe to help those who are slimming! Seven ingredients and minimal work! Simply using veg stock makes this recipe vegetarian!

    Ingredients
    Serves: 8 

    • 15 medium potatoes, peeled and cut into pieces
    • 2 large leeks, chopped
    • 15 sprouts, chopped
    • 1 litre boling water
    • 3 chicken or vegetable stock cubes
    • 1 teaspoon garlic powder
    • 1 teaspoon pepper

    Method
    Prep:20min  ›  Cook:45min  ›  Extra time:5min  ›  Ready in:1hr10min 

    1. Peel, chop and roughly chop potatoes, leeks and sprouts and add to a large pan
    2. Take litre of freshly boiled water and add the 3 stock cubes, garlic powder and pepper and stir till stock is dissolved. Add to pan with veggies, bring to boil and simmer for 45 minutes.
    3. Once all ingredients have gone soft in texture and the potato is falling apart, remove from heat and blend to preferred consistency. Taste and add more pepper to desired taste. Serve immediately or leave cool and freeze if desired!

    Tip

    You can reduce the pepper and make it less spicy for babies! My 1 year old loves it and it's a sneeky way of getting sprouts into young children! :)
