About this recipe: For those who love muesli but hate the raisins in it. This homemade muesli is very easy to make and full of goodness. You can use or any kind of nuts you'd like, as well as dried fruits, and use jumbo oats if possible.

Serves: 6 

  • 340g porridge oats
  • 85g mixed nuts (optional)
  • 85g dried cranberries
  • 170g honey
  • 225g vegetable oil

  1. Preheat oven to 150 C / Gas mark 2. Line a baking tray with parchment.
  2. In a large bowl pour in the oats, nuts and cranberries.
  3. In a separate bowl, whisk the honey and vegetable oil together until they are well blended then pour the mix into the oats mix.
  4. Bake in the oven for about 20 minutes. Keep an eye on it and make sure to mix it around every 5 to 10 minutes so that it bakes evenly. You'll know it's done when it's golden brown.
  5. Take it out of the oven, give it a final toss and leave to cool. Store in an airtight container. Serve topped with yoghurt, fresh blueberries and a drizzle of honey.
