In a shallow bowl large enough to hold 2 slices of bread, beat the 2 eggs until blended. Add in the milk and vanilla and mix well.
Toss the 2 slices of bread in the egg mixture so that both slices are covered and then leave in the bowl so that they can soak up the rest of the mixture. Leave this for about 5 minutes, longer if you can wait.
When you are ready to start cooking the toast, spray some cooking spray onto a frying pan, or a little amount of oil if you have a non-stick pan. Place the now eggy bread onto the pan and cook on a medium heat for a few minutes.
If you are using cinnamon, sprinkle some on each slice of bread along with some caster sugar and then turn the bread over so that this side can cook.
For serving, sprinkle some icing sugar on top of each along with maple syrup and fresh fruit.
You can also mix the caster sugar and cinnamon into the egg mixture while the bread is soaking.
