Crab and tomato pasta

    This crab and tomato pasta makes a tasty meal that is rich in healthy Omega 3 fats, and it takes just minutes to make.

    Serves: 4 

    • 300g fusilli pasta
    • 1 onion, finely sliced
    • 1 tablespoon olive oil
    • 2 cloves garlic, crushed
    • salt and pepper to taste
    • 150g tomatoes, roughly chopped
    • 1 large glass dry white wine
    • 1 handful chives, roughly chopped
    • 1 handful parsley, roughly chopped
    • 1 red chilli, finely sliced
    • 1 dessertspoon capers
    • 1/2 pack Seafood & Eat It® brown crab
    • a squeeze of lemon

    1. Place the pasta in salted water and follow the packet instructions. Meanwhile sauté the onion in the olive oil then add the garlic and continue until soft and golden. Season with salt and pepper.
    2. Add the tomatoes to the sauce along with the wine; simmer until the tomatoes have lost structure.
    3. Add the chives, parsley, chili and capers and let simmer again for a further 5 minutes.
    4. Finally, add the brown crabmeat to the sauce to warm through. Just before serving on the pasta squeeze over some lemon.
