Crab rosti

    The perfect crab rosti. Crab is mixed with shredded potatoes and a delicious combination of flavourings.

    Serves: 2 

    • 125g cooked, peeled and shredded potatoes
    • 1 egg
    • 1 teaspoon Worcestershire sauce
    • 1 tablespoon mayonnaise
    • 1 pinch mustard powder
    • 1 teaspoon mustard
    • squeeze of lemon
    • 1 handful parsley, chopped
    • 1 teaspoon melted butter
    • 3 tablespoons breadcrumbs
    • 1 pinch each cayenne pepper, mace and ginger
    • 1 pack Seafood & eat it® white crab
    • oil for frying

    Prep:10min  ›  Cook:15min  ›  Extra time:15min chilling  ›  Ready in:40min 

    1. Put all the ingredients, except the crab, in a bowl and mix thoroughly till you get a thick heavy mixture.
    2. Sprinkle the crab into the mixing bowl and fold in to the mixture making sure it is evenly distributed.
    3. Mould the mixture into about 6 balls, flatten them and chill in the fridge for 15 minutes.
    4. When ready shallow fry the chilled rosti in hot oil. Serve with a few salad leaves and enjoy.

    I would have liked to know how high to fry them at and for how long. I just guessed and did them for 6 mins a side at medium heat which worked okay. It would have been better if I had rotated them at 3 mins so they cooked more evenly. I used 200g of crab meat, because all I could taste was potato when I used 100g. The taste of everything else was perfect. I will make them again.  -  26 Jul 2014
