Fish with a tangy wine sauce

About this recipe: I love this recipe as it's so simple but so tasty! I make this with homemade potato wedges, green beans and basil leaves.

Serves: 4 

  • 1 clove crushed garlic
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 225ml white wine
  • 4 fillets white fish (cod, haddock or sea bass)

  1. Put the garlic, lemon juice, oil, salt, pepper and wine into a frying pan. There should be about 0.5cm (1/4 in) of wine in the pan. Stir well and heat through so it is gently simmering.
  2. Place the fish fillets in and cook for 5 to 10 minutes (depending on the size of the fillets) turning once until cooked through.
  3. Serve with your choice of potatoes, salad and veg. A garnish of basil leaves are lovely with this recipe!


I tend to use a LOT of wine and soak up the excess sauce with warm home made bread - but it's really up to you how much wine you want to use.
