Coconut chikki

    Sweets are a centrepiece of the Punjabi agricultural festival Lohri, and coconut chikki is definitely a favourite. So here's a quick idea for your Lohri feast, and you won't even have to place a few calls to Pakistan to get the recipe.

    Serves: 8 

    • 1 tablespoon ghee
    • 400g grated dried coconut
    • 150g brown sugar
    • 150g sugar

    Prep:10min  ›  Cook:5min  ›  Ready in:15min 

    1. Add 1 tablespoon of ghee to a pan; roast the grated coconut in it. Set aside.
    2. Add the brown sugar to a frying pan and slowly mix in sugar. Put in a glug of water and let boil.
    3. Check the mixture for when it starts to solidify.
    4. Take the coconut you put aside earlier and add it to the mixture, mix well so the coconut is evenly spread throughout the sugar.
    5. Pour the mixture into a pan and cut into pieces. Serve and enjoy!

    I'm not sure where I went wrong, but my end result didn't look anything like the photo. It was still edible, but not what I was expecting - I think I'll leave sweet-making to the experts in future!  -  28 Dec 2012


    this is a brilliant recipe with a lovely outcome and I think it works better and tastes better with fresh coconut  -  06 Aug 2012
