    About this recipe: Delish guilt-free(ish) fruit loaf. No oil, no butter - just a bit of egg, making for almost no fat per serving. Nicely sliced and spread with - dare I say it? Butter! :)

    Ingredients
    Serves: 6 

    • 280g (10 oz) raisins
    • 300ml (10 fl oz) strong hot tea
    • 340g (12 oz) self raising flour
    • 110g (4 oz) sugar
    • 1 teaspoon ground allspice
    • 1 egg, beaten

    Method
    Prep:10min  ›  Cook:1hr  ›  Ready in:1hr10min 

    1. Preheat the oven to 180 C / Gas 4. Steep the raisins in the hot tea for half an hour.
    2. Mix dry ingredients together. Add the raisin-tea mixture and the beaten egg. Gently combine using a rubber spatula, but don't overmix.
    3. Scoop ingredients into an oiled loaf tin.
    4. Bake at 180 C / Gas 4 for 1 hour.

    Have made this many times now it is a real favourite make it at least twice a month, I use Sultanas in stead of raisins just because we like Sultanas best. So easy to make no fuss at all. And I lost weight as well. - 06 Jan 2013

    Great easy to follow recipe and worked well first time. Only difference to recipe was I put in 1 teaspoon each of cinnamon and mixed spice and 2 of ground ginger. Will definately make again. - 10 Jul 2014

    . Went down well with group of friends, one of which is dairy intolerant and she wouldn't leave without the recipe! Used a mix of sultanas and raisins! - 06 May 2013
