Ingredients
Makes: 24 biscuits
- 225g butter
- 310g plain flour, sifted
- 125g icing sugar
- 1 tablespoon milk
- 1 teaspoon vanilla extract
- Icing
- 250g icing sugar
- 55g butter
- 2 1/2 tablespoons milk
- 1/2 teaspoon vanilla extract
- red, green, black, blue and yellow food colouring

- Preheat the oven to 170 C / Gas 3.
- Using an electric mixer, beat butter until light. Stir in remaining ingredients.
- Knead until velvety. Roll 1/2 of the dough at a time to about 5mm thickness using the smallest amount of flour possible.
- Cut out into large circles. Using a smaller circular cutter, cut out a smaller circle in the centre of each to make rings. Transfer to baking tray.
- Bake for 12 minutes. Biscuits won't brown and will be very pale when cooked. Allow to cool before icing.
- To prepare the icing: In a large bowl, cream together the icing sugar and butter until smooth. Gradually mix in the milk and vanilla until smooth and stiff, about 5 minutes. Separate into five bowls. Colour with red, green, black, blue and yellow food colouring. Start with a small amount of colouring in each bowl, as you can always make the colour more intense by adding more.
- Ice the cooled biscuits with the icing, and place on a serving tray in the same arrangement as the Olympic rings. Enjoy!

You can find natural food colouring in large supermarkets, such as from Dr Oetker®. Food colouring also comes in pastes and gels.
